SUSTAINABILITY PROFILE: INDUCTION COOKING TECHNOLOGY
Induction Cooking is vastly more energy-efficient than conventional, electrical resistance cooking,
using only 1/10th of the energy of conventional electric cooktops, and
cooking twice as fast as gas.
Induction cooking creates an electro-magentic field which stimulates the iron molecules in the cooking
essel to generate heat in the pan, while the cooktop surface itself remains cool to the touch. Turning the
dial results in an instantaneous response of the temperature in the pot, saving time and energy over
the comparatively slow response of conventional electric cooktops. Of the energy produced in the
magnetic coil, 100% of it goes into the pan, with no energy lost to the surrounding space.
